A strawberry dessert that is as beautiful as it tastes. It's cool and creamy with a very unique flavor. Balsamic vinegar and strawberries are a wonderful flavor combination. The balsamic is slightly sweet and tangy with a deep robust flavor. It enhances the natural sweetness of strawberries. Ricotta cheese is sweetened with honey and just a touch of vanilla. Fresh basil sprinkled on top just adds to the freshness of this simple summer dessert. Impressive when served, this could be served at a fancy restaurant.

Ingredients For balsamic strawberries w/ honey vanilla ricotta

  • 1 c
    ricotta cheese
  • 1/2 tsp
    vanilla extract
  • 3 Tbsp
    honey
  • 3 Tbsp
    balsamic vinegar
  • 2 Tbsp
    granulated sugar
  • 1 lb
    strawberries, hulled and diced
  • 2 Tbsp
    fresh basil, chiffonade

How To Make balsamic strawberries w/ honey vanilla ricotta

  • Ricotta, honey, and vanilla whipped together.

    In a food processer add first 3 ingredients and mix for 1 minute. Transfer to a bowl and refrigerate for 1 hour (minimum).
  • Vinegar and sugar simmering in a saucepan.

    Bring vinegar and sugar to a boil in a small pot. Reduce to simmer for 2 minutes, stirring constantly. Cool completely.
  • Tossing berries with balsamic and basil.

    Toss basil and berries with balsamic sauce.
  • Ricotta mixture spooned into a glass.

    To plate, place ricotta cheese on bottom of a glass.
  • Strawberries spooned over ricotta mixture.

    Spoon berries on top. Place a little fresh basil as garnish and half a strawberry on the rim of the glass. You may also wet the rim of the glass ahead of time with a lemon wedge and dip the rim in sugar for decoration.
