Want an easy dessert recipe? Try making these apricot bars. They're unique and filled with apricot flavor. Pineapple chunks and raisins are throughout the bar and pair well with the apricots. These bars remind us of a fruit-flavored blondie. This is a light dessert when you want a treat but don't want something super heavy.

Ingredients For apricot bars

1 cdried apricots, cut into pieces

1/2 craisins
-
2 Tbspbutter, softened

2eggs, well beaten

1 csugar

1 Tbsplemon juice

1 call-purpose flour

1 tspbaking powder
-
1 cancrushed pineapple, drained, 8 oz.
How To Make apricot bars

1Cook apricots and raisins in a saucepan of water for 10 minutes. Drain.

2In a bowl, cream butter, eggs, and sugar. Add lemon juice.

3In a separate bowl, sift flour and baking powder. Add to creamed butter mixture.

4Add apricots, raisins, and pineapple.

5Pour into parchment lined 9x13 pan. Bake at 350 for 30-35 minutes or until brown.

6Remove from pan. Cool. Dust with powdered sugar if you like. Cut into squares.
