This recipe comes from a recipe book published by my church and distributed to the needy with food orders that provide basic staples, meat, fresh fruits and produce, etc. I especially like this book, as it features very low cost, nutritious recipes that are great tasting. This one is not one that I have seen before, so I am sharing it with you.

Ingredients For apple rice toffee

  • 2 c
    cooked rice or whole wheat
  • 4 c
    sliced apples
  • 1/4 c
    brown sugar
  • 2 Tbsp
    lemon juice
  • 1 tsp
    grated lemon rind
  • toffee mixture:
  • 1/2 c
    all-purpose flour
  • 3/4 c
    brown sugar
  • 1 tsp
    ground cinnamon
  • 1/2 c
    butter or margarine

How To Make apple rice toffee

    Mix together all of the ingredients. Turn into a buttered 9 x 9 inch baking dish. Add 1/4 cup of water. Cover apples and rice completely with Toffee Mixture.

    Bake at 350 degrees F for 45 minutes.

    Combine together all ingredients but the butter. Cut the butter into the mixture until the size of small peas. Serve with milk, evaporated milk, half and half or cream.
