This recipe comes from a recipe book published by my church and distributed to the needy with food orders that provide basic staples, meat, fresh fruits and produce, etc. I especially like this book, as it features very low cost, nutritious recipes that are great tasting. This one is not one that I have seen before, so I am sharing it with you.

Ingredients For apple rice toffee

2 ccooked rice or whole wheat

4 csliced apples
-
1/4 cbrown sugar

2 Tbsplemon juice
-
1 tspgrated lemon rind
-
toffee mixture:
-
1/2 call-purpose flour
-
3/4 cbrown sugar
-
1 tspground cinnamon
-
1/2 cbutter or margarine
How To Make apple rice toffee

1Mix together all of the ingredients. Turn into a buttered 9 x 9 inch baking dish. Add 1/4 cup of water. Cover apples and rice completely with Toffee Mixture.

2Bake at 350 degrees F for 45 minutes.

3Toffee Mixture:

4Combine together all ingredients but the butter. Cut the butter into the mixture until the size of small peas. Serve with milk, evaporated milk, half and half or cream.
