Easy summer dessert and it tastes great too. My grandma gave me this recipe.

Apple crisp is a traditional dessert. This recipe, though, adds rhubarb which elevates the flavors. The apples are sweet and the rhubarb is lightly tart. Then, the mixture of spices and brown sugar is balanced perfectly. Oatmeal crumble on top is nice and crispy. The tenderness of the fruit and the crunchiness of the topping are a fantastic mix of textures. Easy to make, this is a delicious apple rhubarb crisp.

Ingredients For apple rhubarb crisp

  • 1/2 c
    oatmeal, uncooked
  • 3
    graham crackers, finely crushed about 1/2 cup
  • 1/4 c
    chopped walnuts
  • 1/3 c
    butter, melted
  • 3/4 c
    firmly packed brown sugar, divided
  • 1 tsp
    cinnamon, divided
  • 1/3 c
    plus 2 Tbsp all-purpose flour

    apples, peeled and chopped about 4 cups
  • 2 c
    chopped rhubarb

  • Oats, graham crumbs, nuts, butter, sugar, flour, and cinnamon in a bowl.

    Combine oats, graham crumbs, nuts, butter, 1/3 cup sugar, 1/3 cup flour, and 1/2 tsp cinnamon in a bowl.
  • Sugar, flour, and cinnamon in a bowl.

    In another bowl, mix the remaining sugar, flour, and cinnamon until blended.
  • Apples and rhubarb added to the bowl.

  • Apples and rhubarb added to a baking dish.

    Spoon rhubarb/apple mixture into an 8 inch greased baking dish.
  • Oat mixture sprinkled on top of apples and rhubarb.
