When I am expecting a couple of gal friends over for coffee and gossip I like to serve these cupcakes, they are quick to prepare.

Ingredients For apple cupcake

1 1/4 call purpose flour

1 1/4 cwhole wheat flour

1 1/2 tspbaking soda

1 tspcinnamon

1/2 tspsalt

1 stickbutter ..room temperature

1 1/2 csugar
-
1 tspvanilla
-
2large eggs
-
2 lgapples, peeled and shredded
-
1 can{16 ounce} frosting
How To Make apple cupcake

1Heat oven to 350F in large bowl whisk together, flour, baking soda, cinnamon and salt..set aside. Using mixer on medium beat sugar, butter and vanilla until light and fluffy.

2Beat in eggs 1 at a time, reduce speed to low and slowly add the flour mix, stir in shredded apples.

3Line the muffin tins and divide the batter evenly into the 22 muffin cups when ready to put into oven to bske add 1/4 cup water into the 2 empty muffin slots, Bake 15 minutes check with toothpick if clean remove from oven...cool in pan for 10 minutes and cool completely on wire rack and apply the icing when cupcakes are cool.
