Found this recipe in the Associated Press Newspaper. Given by Dina Altieri, Instructor at the New England Culinary Institute in Montpelier, VT. I have a friend who has a terrible time trying to find Gluten-free recipes so she gave me this one to try.

Ingredients For apple crisp (gluten-free)

1 Tbsplemon juice

1 Tbsporange juice

1 tspgrated orange zest

1 tspgrated fresh ginger

1 1/2 clight brown sugar

1 tspcinnamon

1 pinchsalt

3/4 crice flour

2 tsptapioca starch

8 Tbspbutter
How To Make apple crisp (gluten-free)

1Preheat oven to 350 degrees F. Lightly spray a 9X9 inch baking pan with cooking spray. Peel and slice the apples into medium size wedges. In a medium bowl toss the apples, the lemon juice, orange juice,orange zest and ginger. Transfer the apples to the prepared baking pan. Set aside. In a food processor, combine the brown sugar, cinnamon,salt,rice flour and tapioca starch. Pulse until the mixture resembles a crumble. Sprinkle the crumble over the apples. Bake 45 minutes or until bubbling. Serve topped with vanilla or cinnamon ice cream.
