warm & creamy orange rice pudding

This recipe and photo came to me from my local Kroger store. I have developed a love affair with rice pudding of late, especially since discovering so many new variations on the original. This one sounds so delicious and soothing as a comfort food. You gotta try it!

Ingredients For warm & creamy orange rice pudding

  • 1 c
    water
  • 2 tsp
    vanilla extract
  • 1 tsp
    ground ginger
  • 2 Tbsp
    sugar
  • 1 c
    arborio rice
  • 1 Tbsp
    orange zest
  • 2 c
    low fat milk
  • 1/4 c
    orange segments

How To Make warm & creamy orange rice pudding

    Bring water to a boil in a medium saucepan; add vanilla, ginger, sugar, and rice.

    Lower heat and allow rice to absorb liquid, stirring as needed, about 10 minutes.

    When most of the liquid is absorbed, add the orange zest and 1 cup of the milk. Allow the rice to absorb the liquid and then add the other 1 cup milk.

    Continue cooking until all liquid is absorbed and rice is fully cooked.

    Serve warm in individual bowls, each topped with an orange segment.
