Ingredients For spiced pumpkin rice pudding

  • 1 1/2 c
    minute rice uncooked
  • 12 oz
    can evaporated milk
  • 1 c
    pumpkin puree
  • 1 c
    water
  • 3/4 c
    dark brown sugar
  • 1/2 tsp
    each cloves, nutmeg, allspice, ginger, salt and cardoman
  • 1 tsp
    cinnamon
  • 1 tsp
    vanilla
  • 2/3 c
    raisins
  • whipped topping (optional)

How To Make spiced pumpkin rice pudding

  • 1
    Combine all ingredients except vanilla and raisins. Cook over medium heat stirring frequently for 15 to 20 minutes. Until rice is cooked.

    Remove from heat and stir in vanilla and raisins. Let stand for 10 minutes.

    Serve warm or cold with whipped topping if desired
