This is made with couscous instead of rice, very creamy and filling.

Ingredients For rice pudding

  • 1 c
    skim milk
  • 1/2 c
    plus 1 tbsp couscous
  • 2 1/2 Tbsp
    brown sugar
  • 1/4 c
    dark raisins
  • 1/4 tsp
    ground cinnamon
  • 1/3 c
    non fat vanilla yogurt

How To Make rice pudding

  • 1
    Heat the milk in a small saucepan until just boiling. Stir in couscous, brown sugar, raisins and cinnamon. Remove mixture from heat and cover with a tight fitting lid. Allow to sit until milk is absorbed (about 10 minutes).

    Stir in yogurt and serve warm. Sprinkle top lightly with more cinnamon, if desired.
