Ingredients For pumpkin rice pudding

  • 1 c
    minute white rice or minute brown rice, uncooked
  • 1 box
    (1 oz.) instant sugar-free butterscotch pudding mix
  • 1 can
    (16 oz.) solid pack pumpkin
  • 1/2 tsp
    pumpkin pie spice
  • 1
    container (12 oz.) non-dairy sugar-free whipped topping
  • 1/2 c
    chopped nuts (optional)
  • ground cinnamon (optional)

How To Make pumpkin rice pudding

  • 1
    Prepare rice according to package directions. Cool.
  • 2
    In a large bowl, combine pudding mix, pumpkin and pie spice. Stir in rice. Fold in whipped topping.

    Top with nuts and ground cinnamon, if desired.
  • 4
    Substitute regular pudding mix and regular whipped topping for the sugar-free versions if desired.
