Ingredients For pumpkin rice pudding

1 cminute white rice or minute brown rice, uncooked

1 box(1 oz.) instant sugar-free butterscotch pudding mix

1 can(16 oz.) solid pack pumpkin

1/2 tsppumpkin pie spice

1container (12 oz.) non-dairy sugar-free whipped topping

1/2 cchopped nuts (optional)

ground cinnamon (optional)
How To Make pumpkin rice pudding

1Prepare rice according to package directions. Cool.

2In a large bowl, combine pudding mix, pumpkin and pie spice. Stir in rice. Fold in whipped topping.

3Top with nuts and ground cinnamon, if desired.

4Substitute regular pudding mix and regular whipped topping for the sugar-free versions if desired.
