This was developed for Post Cereal's founder, C.W. Post in 1926. Its a dessert with a cakelike top layer and a creamy,lemony custard below.

Ingredients For puff pudding

1/4 cbutter

1/2 csugar
-
1 tspgrated lemon rind

2egg yolks
-
3 Tbsplemon juice

2 Tbspall purpose flour

1/4 cpost grape nuts cereal

1 cmilk
-
2egg whites, stiffly beaten
How To Make puff pudding

1Cream butter with sugar and lemon rind. Add egg yolks and beat until light and fluffy.

2Blend in lemon juice,flour,cereal and milk. It will look curdled.

3Fold in beaten egg whites. Pour into greased 1 quart baking dish and place the dish in pan of hot water.

4Bake 325 degrees oven for 1 hour and 15 minutes or until top springs back when touched.

5For individual puddings pour mixture into 5 5-ounce or 4 6-ounce custard cups. Bake for 40 minutes
