This was developed for Post Cereal's founder, C.W. Post in 1926. Its a dessert with a cakelike top layer and a creamy,lemony custard below.

Ingredients For puff pudding

  • 1/4 c
    butter
  • 1/2 c
    sugar
  • 1 tsp
    grated lemon rind
  • 2
    egg yolks
  • 3 Tbsp
    lemon juice
  • 2 Tbsp
    all purpose flour
  • 1/4 c
    post grape nuts cereal
  • 1 c
    milk
  • 2
    egg whites, stiffly beaten

How To Make puff pudding

  • 1
    Cream butter with sugar and lemon rind. Add egg yolks and beat until light and fluffy.

    Blend in lemon juice,flour,cereal and milk. It will look curdled.

    Fold in beaten egg whites. Pour into greased 1 quart baking dish and place the dish in pan of hot water.

    Bake 325 degrees oven for 1 hour and 15 minutes or until top springs back when touched.

    For individual puddings pour mixture into 5 5-ounce or 4 6-ounce custard cups. Bake for 40 minutes
