Yummy lemon curd that my family likes to use as a spread!

Ingredients For lemon curd

  • 2
    eggs
  • 1/2 c
    sugar
  • 3 Tbsp
    lemon juice
  • 1 tsp
    lemon zest, grated
  • 4 Tbsp
    butter (no substitutes), cubed into small pieces

How To Make lemon curd

    In a saucepan mix eggs, sugar, and lemon juice until light in color. Stir in lemon zest and butter. Cook over medium-low or low heat, whisking constantly (about 8 minutes) until the mixture becomes thick, like pudding.

    Transfer to a small bowl and cover with plastic wrap. Chill for 2-3 hours.
