3 Tbsplemon juice

1 tsplemon zest, grated

4 Tbspbutter (no substitutes), cubed into small pieces
How To Make lemon curd

1In a saucepan mix eggs, sugar, and lemon juice until light in color. Stir in lemon zest and butter. Cook over medium-low or low heat, whisking constantly (about 8 minutes) until the mixture becomes thick, like pudding.

2Transfer to a small bowl and cover with plastic wrap. Chill for 2-3 hours.
