I am very excited about this recipe. I've heard amazing things about chia seeds. They can be used as an energy boost, an appetite suppressant, maintain blood sugar levels, and help regulate digestion, to name a few. Per serving, chia seeds also have more calcium than a glass of milk, more antioxidants than blueberries, and more Omega-3s than salmon. Other chia seed uses - soup thickener (add a Tbsp or two of chia seeds to your soup until the desired consistency is reached; use in meatloaf instead of bread crumbs; or sprouts in salad (place seeds on a wet paper towel for a couple of days).

When looking for a sweet treat while eating healthy, a delicious option is this homemade chia seed pudding. Chia seeds have many health benefits, including being high in fiber. After adding to a liquid, they soak up the liquid, plump, and have a tapioca pudding consistency. We added cocoa powder to make a chocolate chia seed pudding and topped it with a few raspberries. It satisfied our dessert craving. Make sure to use whole, not ground, chia seeds for the pudding or it will not set up right. We used both canned coconut milk and refrigerated coconut milk when testing. We felt the canned coconut milk created a thicker pudding.
Ingredients For homemade chia seed pudding

2 ccoconut milk or other milk

1/2 cchia seeds

2-3 Tbspcocoa powder, to taste (optional)

1 Tbsphoney, or more to taste (or sweetener of choice)
How To Make homemade chia seed pudding

1Add all of the ingredients to a blender.

2Blend until smooth.

3Pour into a container. It will thicken in about 10 minutes in the fridge.

4There are endless flavor variations. You can omit the cocoa powder and vanilla extract and add a cup of strawberries for a strawberry version. Or add cinnamon and nutmeg for a Chai Chia Pudding.
