A friend of mine made a Lemon Pie that was OUTTA THIS WORLD! Oh it is sooooooo good and I love it dearly, but it has sugar, corn starch and the pie crust contains all the goodness of white flour and shortening. Since I've been eating the Trim Healthy Mama way, I have cut those things out of my daily diet for the most part, due to much needed weight loss. So, I've decided to make it my mission to have my love of lemon heaven and eat it too. A pie crust is not even needed here. I would write more, but I've got some lemon pudding to dig into. Enjoy!

Ingredients For for the love of lemon pudding (thm friendly)

  • 3
    egg yolks
  • 1/4 c
    butter, melted
  • 1/2 c
    sweet blend (start with 1/4 cup)
  • 1/4 tsp
    salt
  • 2 c
    water
  • 1/2 c
    lemon juice
  • 1 1/2 tsp
    glucomannan
  • 1
    lemon zest, grated

How To Make for the love of lemon pudding (thm friendly)

    Melt your butter and mix egg yolks into it and set aside. I usually microwave my butter for about 30 seconds and then mix the yolks in. You don't want the butter to be super hot.

    In a medium size pan, bring water, Sweet Blend, salt, lemon juice and lemon zest to a boil. Turn off the heat and while stirring quickly, add egg/butter mixture. Once that has been well incorporated, continue to stir vigorously while adding the glucomannan. Continue stirring for approximately 1 minute.

    Place pudding mixture into four 1.Cup bowls. Cover & refrigerate for at least 2 hours. Top with real whipped cream sweetened with sweet blend, stevia, or sweetener of your choice. If you are on the Trim Healthy Mama plan, this is an S dessert.
