sis's strawberry, cream crumb pie

My sister made this pie for my daughters graduation party last summer...everyone just loved it...she said she'd get me the recipe...well, Easter was finally my lucky day...I just happened to have a home made pie crust in my fridge leftover from Easter...what a great way to use a leftover pie crust... Enjoy!

Ingredients For sis's strawberry, cream crumb pie

1 - 9inch - unbaked pie crust

4 ccleaned, sliced strawberries

1/3 cflour
-
1 csugar
-
2eggs
-
1/2 csour cream
-
1 tspvanilla extract
- CRUMB TOPPING

2 Tbspsugar
-
3 Tbsppaked brown sugar
-
1/2 tspcinnamon
-
4 Tbspmelted butter
-
2/3 cflour
How To Make sis's strawberry, cream crumb pie

1Preheat oven to 350 degree F, Have prepared crust ready - or use a store bought - thawed.

2In a bowl blend together flour and sugar. With a hand mixer or I used my kitchen aid. Add the eggs, sour cream and vanilla, mix until well blended - roughly 2 - 3 minutes. Set aside

3Place your sliced strawberries into the prepared crust. Spread evenly.

4Pour the sour cream mixture evenly over the berries. Set aside.

5Place brown sugar, sugar, cinnamon in a bowl. Pour melted butter over the sugars and mix till well blended. Add the flour and mix until crumbly ( I use my fingers )

6Sprinkle crumbs evenly over the strawberries. I used an egg wash consisting of an egg and a splash of cream. With a pastry brush, I brushed the crust of the pie. Place in oven and bake for 1 hour and 10 - 15 minutes.

7Remove from oven and let cool for at least 4 hours to set. Enjoy!
