1 call purpose flour

1 pinchsalt

1/3 cbutter

1 tspcaster sugar (superfine sugar)

1egg yolk

1/4 ccaster sugar

1/4 cbutter
-
1egg

3 Tbspchopped mixed candied peel

2/3 csultanas (golden raisins)
How To Make queen mary tartlets

1Combine the flour and salt in a bowl and rub in the butter until the mixture resembles fine breadcrumbs. Stir in the sugar.

2Mix the egg yolk with 2 Tbsp. cold water and add to the mixture, then knead to a dough. Roll out thinly on a lightly floured board, cut into 12 rounds with a cookie cutter and place in a muffin tin.

3For the filling: cream together the sugar and butter; then beat in the egg. Add the mixed peel and sultanas. Divide the mixture between the tart shells.

4Bake in a preheated 375-degree oven for 30-35 minutes or until golden and set.
