Ingredients For pineapple pie

  • 1 1/2 c
    coconut, flaked
  • 2 Tbsp
    butter, melted
  • 3 1/4 oz
    package vanilla tapioca pudding mix
  • 3 oz
    lemon-flavored gelatin
  • 1 1/4 c
    milk
  • 1/2
    of a 6-ounce can frozen unsweetened pineapple juice concentrate thawed
  • 1
    2-ounce package dessert topping mix
  • 1
    8 3/4-ounce can crushed pineapple, well drained

How To Make pineapple pie

  • 1
    For pie shell, combine coconut and butter; press on bottom and sides of 9-inch pie plate. Bake at 350 degrees f till coconut is golden, about 15 minutes. cool. Next for the filling, In medium saucepan combine pudding mix and gelatin. Stir in milk, cook and stir till mixture boils; remove from heat. stir in concentrate; chill till partially set. prepare dessert topping mix according to package directions, Fold into pudding mixture; add crushed pineapple, pour into pie shell; chill thoroughly. serve
