2In a small bowl, whisk egg white until frothy. Using a pastry brush, brush the inside of the pie crust with the egg white. Set aside.
-
3In my food processor I added the flour, sugars, butter and pulsed until it formes fine crumbs.
-
4Place 2/3 the crumbs in the bottom of the prepared pie crust.
-
5Add the peaches, spreading out evenly. Sprinkle the remaining crumbs over the peaches and sprinkle with cinnamon.

7Cool and serve alone or with a big scoop of ice cream! ** When I posted this recipe...I hadn't tried it yet, was new to me and we weren't trying it until the next day. So,I wanted to give you all some feedback on it. In my opinion it was delicious...it reminded me of a peach custard pie in a way. I do think though, that the crumb mixture would be just as good mixed in with the peaches, just as well as on the bottom of the crust. I'm going to make it again and try it that way...will let you know which I like better...very tasty pie!!
