We love Key lime pie, this is only ONE version of how I make my key lime pie, the other I will post later it does NOT contain the typical easy Sweetened Condensed Milk version, EVERYTHING inside is made on my cooktop then baked in the oven....

Ingredients For my refreshing key lime pie

    inch pie shell
  • 5
    large egg yolks
  • 1
    14.oz can borden's sweetened condensed milk
  • 8-10 Tbsp
    key lime juice
  • 1 c
    heavy whipping cream
  • 3 Tbsp
    confectioners' sugar
  • 1-2
    grated key lime zest

How To Make my refreshing key lime pie

  • My butter pie crust, which is so flaky. If you want it less flaky, cut the butter in until it resembles corn meal.

    Preheat Oven to 425*F. Line your 9" pie plate with your dough being sure to prick it all over. Bake for 6 minutes check if needed bake an additional 4 more minutes, until just beginning to brown. Remove pie shell from oven. Reduce temperature to 350*F.

    In a bowl beat large egg yolks with whisk, mix them well. Slowly stir in borden's sweetened condensed milk. Mixing well stir in lime juice & grated rind. The filling SHOULD be tart, if its NOT tart enough add more juice! Pour filling into lightly browned pie shell. Bake at 350*F 12-15 minutes. Remove from Oven and cool.

    Whip your whipping cream slowly adding the confectioners sugar, whip until still, you can add as much confectioners sugar as needed for your taste, not too much!! Spread over cooled pie and decorate with lemon rind. Serve at room temperature. Make sure you refrigerate IF not eating within 3 hours. Refrigerate left overs, if there is any.....
