Ingredients For low-cal pumpkin cottage pie

  • 1 1/2 c
    low-fat cottage cheese
  • 3
    eggs
  • 1 Tbsp
    rum flavoring or vanilla
  • 1 1/2 tsp
    pumpkin pie spice
  • 2 c
    cooked pumpkin
  • 5 Tbsp
    brown sugar or sugar substitute
  • 1/2 tsp
    salt
  • 1
    graham cracker pie crust (8 inch)

How To Make low-cal pumpkin cottage pie

  • 1
    Blend cottage cheese, eggs, rum flavoring and spice in blender until very smooth. Combine pumpkin, sugar and salt. Stir in cottage cheese mixture. Pour into pre-baked pie shell. Bake in 275 degree oven for 60 minutes. Chill before serving.
