joy of cooking pumpkin pie filling

This is one my favorite & easy pumpkin pie fillings to make. When time is limited I use a pre frozen 9 inch pie shell. Its up to 55 minutes for baking, its takes about a hour, depending on your oven. I found this recipe on The Joy of Cooking web site.

Ingredients For joy of cooking pumpkin pie filling

  • 3 lg
    eggs
  • 1/2 c
    heavy whipping cream
  • 2 c
    pumpkin puree
  • 1/2 c
    light brown sugar
  • 1 tsp
    cinnamon
  • 1/2 Tbsp
    ground ginger
  • 1/8 tsp
    salt

How To Make joy of cooking pumpkin pie filling

    Pre heat oven temperature to 375 degrees F (190 degrees C) and place rack in bottom third of the oven.

    Place the baked pie on a wire rack to cool. Serve at room temperature. Store any leftovers in the refrigerator. Makes one 9 inch pie.
