This is one my favorite & easy pumpkin pie fillings to make. When time is limited I use a pre frozen 9 inch pie shell. Its up to 55 minutes for baking, its takes about a hour, depending on your oven. I found this recipe on The Joy of Cooking web site.

1/2 clight brown sugar

1/2 Tbspground ginger

How To Make joy of cooking pumpkin pie filling

1Pre heat oven temperature to 375 degrees F (190 degrees C) and place rack in bottom third of the oven.

2Place the baked pie on a wire rack to cool. Serve at room temperature. Store any leftovers in the refrigerator. Makes one 9 inch pie.
