I've made this pie for as long as I can remember. If you like Mocha Frappe's you will love this pie. I add a layer of Ganache before adding the filling...my son doesn't like coffee, but he just loves this pie...this recipe is for a 7 inch pie...it serves 4 larger or 6 small pieces...I hope you'll give it a try...enjoy! Ingredients For irish coffee pie w/ chocolate ganache
- CRUST

2/3 cgraham cracker crumbs

2 Tbspmelted, butter
-
2 Tbspsugar
- FILLING

4 ozcream cheese, softened

1/4 csugar
-
1/4 cwater
-
2 tspinstant coffee granules
-
1 - 8 ozcool whip, thawed

1 Tbspwhiskey, optional - i didn't use
-
1 tspvanilla, if not using whiskey
- GANACHE
-
1/2 csemi-sweet chocolate chips
-
about 1 Tbspcorn syrup

1 1/2 Tbspcream
- NOTE: THIS COULD EASILY BE DOUBLED FOR A LARGER PIE..
How To Make irish coffee pie w/ chocolate ganache

1Preheat oven to 375 degree F. Combine the cracker crumbs, sugar and butter; press onto the bottom and up the sides of a greased 7 in. pie plate. Bake for 8-10 minutes or until lightly browned. Cool on a wire rack.

2While crust cools, make Ganache. In a microwave safe bowl, add Ganache ingredients, microwave for about 30 second, stir. If needs more melting, place back in microwave for a few more seconds.

3Spread Ganache evenly onto the crust. Set aside.

4Make filling: In a small bowl, beat the cream cheese and sugar until smooth. Combine the water, whiskey or vanilla if desired and coffee granules; beat into cream cheese mixture until smooth.

5Fold in whipped topping.

6Spoon into crust. I then grated some chocolate on top. Totally optional...I have also in the past grated a few Andes mints on the top. Enjoy!
