We were looking for something different to serve this Easter. I made this pie and we couldn't stop eating it. It tastes like a macaroon cookie.

Ingredients For coconut macaroon pie

9"unbaked pie shell

1/4 c.chopped pecans
-
2eggs, slightly beaten
-
1/2 c.water
-
1 1/2 c.sugar

1/4 c.flour
-
1/4 tsp.salt

1 1/3 c.flaked coconut

1/2 c.butter, melted
How To Make coconut macaroon pie

1Sprinkle pecans over bottom of pie shell.

2Combine remaining ingredients; pour into pie shell.

3Bake in slow oven at 325 degrees until golden brown, and almost set, approximately 45 minutes.
