This ice cream pie is an easy no-bake dessert anyone can make. The hardest parts are waiting for the ice cream to get slightly soft and for the whole pie to chill. Once set, it's a rich and indulgent dessert chocolate lovers will enjoy. The crunchy chocolate crust pairs well with the smooth and creamy chocolate ice cream and the mousse-like layer. Sprinkling crust crumbs between the two layers remind us of the crunchies in some store-bought ice cream cakes. So yummy!

  • 4 c
    chocolate ice cream, softened
  • 3 c
    chocolate cookie crumbs
  • 1/2 stick
    butter, melted
  • 16 oz
    whipped topping, thawed, divided
  • 1/2 c
    hot fudge sauce
  • 1 box
    chocolate fudge instant pudding (3.9 oz)
  • 3/4 c
    special dark chocolate baking chips

The original recipe called for chocolate graham cracker crumbs, however after research we realized they have been discontinued. We substituted chocolate sandwich cookies and they created a tasty crust.
  • Set the ice cream out so it can start to soften.

  • Melt butter and add to the crumbs. Mix well. Press half of the crumbs into the bottom of the dish.

    Now for the chocolate cookie crumbs. Use a food processor to grind the cookies into crumbs. Melt butter and add to the crumbs. Mix well. Press half of the crumbs into the bottom of the dish. Set the other half aside.
  • In a large bowl or the bowl for your mixer, add 12 oz of whipped topping, hot fudge sauce, and dry instant pudding mix.

  • Melt the dark chocolate, stir into whipped topping, and spread on the pie.

    Melt the special dark chocolate chips in a small/medium microwave-safe bowl. Mix the melted chips into the remaining 4 ounces of whipped topping mixture. Spread over the top crumbs.
  • Cover tightly with plastic wrap and place in the freezer.

    And now we WAIT. You have to wait, at least 8 hours. Overnight is better but who are we kidding? With this much chocolate, we are not going to wait that long. When ready to serve, scoop it out, cut it, or grab a spoon and dig in.
