~ banana cream pie ~
One of my favorite pies as a kid. There's nothing like a scratch made pudding for a pie. This basic pudding was my Grams recipe, she would be so pleased to know how often I've used it. You just can't beat a good banana cream pie. Enjoy!

How To Make ~ banana cream pie ~
-
1Scald milk and cream in a saucepan. Whisk together flour, salt and sugar in a medium saucepan. Over medium heat, once milk is scalded, whisk it into the flour mixture. Continue stirring until thickening. Pour a small amount of pudding into the yolks and whisk quickly. Pour the yolks back into the mixture and continue cooking for another minute. I add a few drops of yellow food coloring now. Completely optional.
-
2Remove from heat and stir in vanilla and butter. Cool pudding to lukewarm, doesn't have to be completely cool.
-
3Slice banana's into the bottom of the crust and arrange them evenly. Pour the pudding over the banana's. I don't put meringue on my pie, so I just add some plastic wrap to the top of the pudding and finish cooling completely. Once cool, I top with whipped cream, nuts, caramel and some banana for garnish.
