arizona sunshine pie
I had this years ago at Bunco and fell in like with it! I have made it many times and always get asked for the recipe! Perfect for potlucks, You won't find it duplicated on the buffet! You could use Stevia in place of the sugar. It originally called for 1 1/2 cups sugar but I cut it back to 1 cup.

11 whole lemon large

4eggs

1 stickbutter melted

1 csugar

1 tsppure vanilla

1 pinchsalt if desired

1unbaked pie crust

whipped cream of your choice (aerosol can or fresh)
How To Make arizona sunshine pie

1Heat oven to 350
-
2Fully wash and cut whole lemon into smallish chunks (leave the rind on it). remove seeds and ends

3Place in food processor or large blender - lemon chunks, butter sugar, vanilla, salt and eggs. Blend until smooth and creamy

4Pour into pie crust and place in oven

5If top is becoming too brown, cover loosely with foil and continue baking. COOL and serve with whipped cream.
