pumpkin muffins ~ 2 ingredients

Tweaked this 2 ingredient recipe to make muffins as the recipe called for a 11"x7" pan which I didn't have. So I made Jumbo muffins ones! Put the glaze over each one and crushed walnuts, also used cranberry cider . Delish Next time would like to add raisins and sprinkle with coconut on top ~ just saying

Ingredients For pumpkin muffins ~ 2 ingredients

  • 1 can
    15 oz. 100% pumpkin puree, not pumpkin pie filling
  • 1 box
    yellow cake mix (i used dunkin hines with butter)
  • 3/4 c
    finely chopped walnuts (optional)
  • APPLE CIDER GLAZE
  • 1 c
    powdered sugar
  • 2 Tbsp
    apple cider ( i used cranberry apple cider)
  • 1/2 tsp
    pumpkin pie spice ( i used my own spices)

How To Make pumpkin muffins ~ 2 ingredients

    Preheat oven to 350 degrees F ~ In a large bowl mix cake mix with pumpkin filling using a hand mixer or a stand mixer. Beat on medium for 2 minutes.

    Pour into Jumbo Muffin Cups ~ or a 7 x 11 inch baking dish. Sprinkle chopped walnuts on top. Bake 20-25 minutes.

    Apple Glaze: In a small bowl blend all ingredients until smooth. Pour over muffins or cake when completely cooled and let drizzle down the sides. Let set before covering ~
