These quick and easy pumpkin cheesecake bars are going to be a hit with family and friends. If someone says they don't like pumpkin, we think they'd still like this dessert. The crust has a savory butter taste. It's gooey, yet crunchy at the same time. Cream cheese and sugar make the filling sweet and creamy. The pumpkin flavor is subtle and delightful. They're divine!

Ingredients For pumpkin cheesecake bars
- CRUST:

2 call-purpose flour
-
1/2 cfirmly packed brown sugar

1 cbutter, softened
- CHEESECAKE FILLING:

3 pkgcream cheese, softened, 8 oz. each

1 cpure pumpkin
-
3/4 csugar
-
3 lgeggs
-
1 tspvanilla extract
-
1 tsppumpkin pie spice
How To Make pumpkin cheesecake bars

1Preheat oven to 350 degrees F. In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender (or 2 forks) until the mixture is crumbly.

2Press evenly into a 9x13 baking pan lined with heavy-duty aluminum foil.

3Bake 15 minutes or until lightly browned.

4In a large bowl, beat cream cheese with 3/4 cup sugar in an electric mixer at medium speed until smooth.

5Add pumpkin and then add eggs, 1 at a time, and vanilla and pumpkin spice.

6Stir to combine.

7Pour over warm crust.

8Bake for 40-45 minutes, or until filling is set.

9Cool.

10Once cooled down cut into squares. Serve with whipped cream.
