peachy blueberry fritters

These wonderful fritters were shared with our friends in town, only after I had 2 for myself. They are perfect for breakfast with a cup of coffee. I think they could qualify as a desserts as well. Hope you enjoy!

Ingredients For peachy blueberry fritters

2 lgeggs

1/3 cmilk

1/2 tspvanilla

1 call purpose flour

1 tspbaking powder

3 Tbspsugar

1/2 tspsalt

1/4 to 1/2 tspnutmeg

1 Tbspbutter, melted

1 1/2 cmixed fruit (i used 1/2 peaches diced small and 1/2 blueberries

oil for frying
- GLAZE

1 cpowdered sugar
-
heavy cream (enough to make glaze)

1/2 tsporange zest (optional)
How To Make peachy blueberry fritters

1Heat oil in deep fryer or deep frying pan to 375 degrees F.

2Whisk milk, eggs and vanilla together. Combine flour, baking powder, sugar, salt and nutmeg. Fold in peaches; add melted butter.

3With cookie scoop, scoop batter into hot oil. The batter will sink and then rise. Cook for about 2 - 3 minutes until golden brown, depending on size of fritters. Remove fritters from oil; drain on paper; glaze.

4GLAZE: Mix together and drizzle over fritters.

5NOTE: you can also just roll cooled fritters in powdered sugar if you don't want to glaze.
