Ingredients For dried cherry muffins

1 cdried cherries, pitted

1 cbuttermilk
-
1 3/4 cunbleached all-purpose flour

2 tspbaking powder

1 tspbaking soda
-
pinch salt
-
1 stickbutter, unsalted, room temperture

1/4 csugar
-
2eggs, slightly beaten
How To Make dried cherry muffins

1mix the cherries and buttermilk to well combined in a small bowl, and put aside to soak for 30 minutes. Preheat you oven to 350 degrees f.

2Generously butter 18 muffin cups. In a large bowl, sift together flour, baking powder, baking soda, and salt. in another bowl, cream together the butter and sugar. Add the eggs and mix very well.

3Make a well in center of the dry ingredients, and spoon the cherries and buttermilk in it. Then add the butter-sugar mixture. Mix until well blended- but do not overmix.

4Fill the cups two thirds full with the batter, and bake till a toothpick inserted in the center comes out clean, 18 to 20 minutes. transfer muffins to wire rack to cool. serve
