Ingredients For beetroot & chocolate cupcakes

  • 375 g
    fresh beetroot - peeled & grated very fine on grater
  • 270 g
    self rising flour
  • 35 g
    cocoa powder
  • 1 tsp
    mixed spice powder
  • 200 g
    brown sugar
  • 3 lg
    3ggs - room temperature
  • 180 g
    unsalted butter - melted and cooled
  • 2 tsp
    vanilla essence
  • 1 tube
    white frosting

How To Make beetroot & chocolate cupcakes

    1) Preheat oven to 180 C 2) Line muffin tray with paper cupcakes. 3) Beetroot wash and grate on grate on the smallest holes,keep in a bowl.Add sifted flour,cocoa,mixed spice,sugar,eggs,butter,vanilla essence and mix all well together. 4)Spoon each paper cupcakes with the mixture.(about 3/4) 5)Bake for about 25 - 30 minutes or until a skewer inserted into centers comes out dry.Set the cupcakes on wire rack,cool then decorated with sweetened frosting and your favourite ingredients. PS.This cupcakes are very delicious and tasty,you will be surprise.
