pecan topped bisquick peach cobbler

This recipe came about because I only had 1-29 oz. can of peaches and wanted to make a peach cobbler. I was out of self rising flour & decided to use Bisquick instead, and to add a little crunch and texture I decided to top it with pecan halves. Great idea, once toasted they were great and added a lot of flavor. I didn't need a large pan like I usually make, just a little something sweet as mama use to say, and the 9X9 size pan did the trick. There are many variations to this tasty dessert treat, this is my spin on it. Eat plain or topped with ice cream or whipped topping. Quick & easy.

Ingredients For pecan topped bisquick peach cobbler

1 cansliced peaches (29 ounces) drained to large measuring cup

1 stickbutter, melted in 9x9 size pan

1 cbisquick or self rising flour

1 clight brown sugar,firmly packed

2 tspvanilla bean paste, or vanilla extract

2 Tbspmalibu caribbean coconut rum liqueur

apple juice enough to make 1 1/2 cup when added to peach liquid

1 cpecan halves
-
1 tspeach cinnamon & nutmeg(use much less if a lighter colored crust is desired)
How To Make pecan topped bisquick peach cobbler

1Preheat oven to 350 degrees F. These are most of the ingredients used to make the dessert.

2Melt butter in 9X9 Inch baking pan.

3Drain peach liquid into a large measuring cup at least a 2 cup measure.

4Arrange peaches over the melted butter. DO NOT STIR.

5To the measured peach liquid, add the cinnamon & nutmeg, vanilla bean paste or extract, & coconut liqueur, then add enough apple juice to make 1 1/2 cups total.

6Pour mixture into medium size bowl and add the brown sugar, and bisquick, whisk together with a wire whisk till completely blended and no lumps remain. Then pour mixture carefully over the arranged peaches.

7Top with pecan halves and bake in preheated 350 degree F. oven for approximately 40 to 45 minutes till crust has risen to top and pecans are toasted.

8Remove from oven and serve warm or when completely cooled.
