2lbs large ripe nectarines

2lbs white sugar

1/4cup water

1/8teaspoon vanilla extract

1/4cup brandy

11/2tablespoons lemon juice
How To Make marmelatha nektarinia - greek - nectarine preserve

1Peel and seed nectarines, and cut into large chunks. Add to a large pot with sugar and water and boil for 30-40 minutes, until the fruit is nice and soft.

2Keep a close watch toward the end and 5 minutes before removing from the heat, stir in vanilla, lemon juice and cognac and mix well.

3Place in sterilized jars and allow to cool completely before sealing.
