i made these as a breakfast meal so i used the sausage and eggs, i later filled with a mixture of blueberry pie filling and whipped cream cheese, coating the nest with the cream cheese then filling with the pie filling. my son said they taste like blueberry danish.

- FILLING, BLEND IN FOLLOWING ORDER

1I made these as a breakfast treat, but after making them my family and i found many more uses, you can fill with fruit and eat as a lite desert with whip topping, fill with taco meat cover in cheese,bake 5minutes to warm shell and complete with taco toppings. you can use these as little nest for appetizers just fill with your favorite cheese blend or chicken or ham salads for a tasty treat. our favorite to date is cream cheese, with our favorite pie filling, blueberry or cherry

2preheat oven to 400, blend 6 eggs,1 cup milk,1/2 tsp salt and 1 tsp vanilla ,1 cup flour,in a blender. insuring that all flour is mixed and no lumps. slowly very slowly as not to cook the egg mixture. continue blending for a minute more.

3pour mixture evenly into 12 greased muffin tins. fill only about half way. I used a mini loaf pan for the mixture. bake for 16min or till golden brown.

4cook sausage till fully cooked drain well and replace in frying pan. beat together remaining eggs,milk and seasoning adding the minced garlic last in a blender. pour over sausage and stir till eggs are fully cooked.

5scoop into cooked shells. serve two on a plate and cover with shredded cheese.
