Always looking for more recipes for Cranberries !!! Found this one in my Cape Cod cookbook. It is very good ! I only had a 13 1/2 by 9 1/2 inch glass baking pan, sooo they would be thicker in a regular 13x9" pan. Hope you enjoy ~ could try using other fruits, such as blueberries which is what I am going to try next time I make this !

Ingredients For cranberry cookie bars ~

1 1/2 csifted all purpose flour (sift before measuriing)

1 tspbaking powder

1/2 tspsalt
-
1/2 cbutter or margarine
-
1 cgranulated sugar
-
1/2 cbrown sugar (packed)

2eggs
-
1 tspvanilla ( iused almond extract)
-
1 cfresh or frozen cranberries, chopped
-
1/2 cwalnuts or pecans (optional)
How To Make cranberry cookie bars ~

1Preheat oven to 350 degrees Grease a 9 X 13 inch pan.

2In a bowl sift together sifted flour, baking powder and salt. (Yes sift the flour before measuring it)

3In a second bowl , cream butter and both sugars. Add eggs one at a time, beating until fluffy. Add vanilla. (or almond flavoring)

4Blend in dry ingredients. Stir in chopped cranberries and nuts. Spread in greased pan.

5Bake 30 minutes. When cool, cut into bars. Do not overbake ( Mine only took 24 minutes) because of the amount of sugar, cookie dough tends to become hard and stick to the pan if overbaked.
