  • 4 c
    blackberries
  • 1/4 c
    sugar
  • 1 Tbsp
    whole wheat flour
  • 1/4 tsp
    lemon zest
  • 1 Tbsp
    lemon juice
  • 1 c
    whole wheat flour
  • 3/4 c
    cornmeal
  • 1-1/2 tsp
    baking powder
  • 1/4 tsp
    baking soda
  • 1 lg
    egg yolk
  • 1/2 c
    buttermilk
  • 1/4 c
    canola oil
  • 3 Tbsp
    sugar
  • 1/2 c
    frozen corn kernels. thawed.

How To Make corny blackberry cobbler

    Heat oven to 375. Spray a 9" pan w/ cooking spray. In bowl, combine berries, 1/4 cup sugar, 1 tbsp flour, lemon zest and lemon juice.

    In bowl whisk together flour, cornmeal. baking powder and baking soda. In small bowl, whisk together egg yolk, buttermilk, oil and 3 tbsp sugar.

    Add egg yolk mix to dry ingredients, stir to blend. Fold in corn. Pour berry mix into pan, spoon batter over berries. Place pan on a baking sheet and bake 45 mins.
