This dessert was very popular in Ireland in the 80's and early 90's , especially at Irish weddings. It's one of my favourite desserts , I remember having it at my aunts wedding and from then on love it ...

Ingredients For baked alaska..
- FOR SPONGE

1/4 c2oz self raising flour

1/4 c2oz caster sugar

2eggs
-
pinch of salt

1 tspvanilla extract
- FOR FILLING

1half block of ice cream (i uesd vanilla )

1 cansmall can mandarin segments(can use fruit cocktail)
- FOR MERINGUE

3egg whites
-
2 1/4 ccaster sugar
-
1/3 tspcream of tarter
-
1 tspgranulated sugar for top of meringue
How To Make baked alaska..

1Preheat the oven to 200c/400f. prepare your tin I used a round 7inch loose bottomed tin ,grease well with butter or baking spray ..

2In a large bowl ,make sponge base by beating the eggs, sugar, salt and vanilla extract together with an electric hand held mixer . until nice and fluffy you will see the wee air bubbles forming.

3Add to that the sift four , folding in gently with a spatula. Fill the mixture into the prepare tin ,and bake in the oven for 10 to 12 minutes . you want your sponge to be a nice golden brown colour...

4Once your sponge is done ..leave to cool completely on a wire tray.

5Using the electric mixer again, make the meringue by beating the 2 egg whites( don't waste the yolks put in a bowl wrapped up on top with cling film and make scramble egg next morning for your breakfast)and 1/3 cream of tarter in a large bowl until thick and soft peaks form .Gradually adding the caster sugar and beating well . The mixture should be glossy and firm .

6On a baking tray put a sheet of parchment paper over tray , then place your cooled sponge on top of that .Then on top of the sponge place the frozen block of ice-cream and to that place on top again the mandarin segments or you could use fresh strawberries or fruit cocktail the day I made this all I had in the pantry was mandarins ,and they did the job nicely .Now very quickly spoon over the sponge with the meringue mixture and cover completely making sure it is well sealed with the sponge .Swirl the meringue into peaks and sprinkle with granulated sugar . place in your preheated over for ONLY 3 minutes until the meringue is a pale golden colour . serve immediately .
