This is something that I like to make every time we go camping. Not only does it fulfill cravings for cookies, but it provides you with a boost of energy which is perfect for camping or hiking.

Ingredients For trail mix cookies

  • 2 1/2 c
    oats
  • 1 c
    whole wheat flour
  • 1 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
    cinnamon
  • pinch
    salt
  • 2 stick
    butter
  • 1 c
    granulated sugar
  • 1 c
    brown sugar
  • 2 tsp
    vanilla
  • 2
    eggs
  • 3/4 c
    peanut pieces
  • 3/4 c
    raisins
  • 3/4 c
    m & ms
  • 3/4 c
    shredded coconut

How To Make trail mix cookies

    Preheat the oven to 350 degrees F. Line cookie sheets with parchment paper.

    Heat butter in microwave for 3-5 minutes, or until it browns.

    In a bowl, mix oats, all purpose flour, whole wheat flour, baking powder, baking soda, salt, and cinnamon.

    In another bowl, cream the browned butter, brown sugar, and white sugar. Beat in the eggs, & the vanilla extract.

    Slowly add in the flour mixture and stir until combined. Add the m&m's, coconut, peanuts, and raisins. Be sure to evenly incorporate everything or you'll have some cookies without all of the components.

    Roll cookie dough into a ball, place on cookie sheet, and flatten with your fingertips.

    Bake 11-14 minutes or until they're lightly golden.
