Ingredients For soft ginger cookies

1 csugar plus three tablespoons on the side

1/2 cdark brown sugar

1/4 cdark molasses

3 cunbleached wheat flour

2 tspginger powder
-
1/4 tspsalt
-
1 tspbaking soda

2 tspcinnamon, ground

1/4 tspclove, ground
-
2 Tbspfresh ginger,minced very fine

1 lgegg,beaten

1 Tbspwater,cold

3/4 cunsalted butter,softened
How To Make soft ginger cookies

1Sift together all of the dry ingredients,except the sugars. Cream the butter with the sugars,add in the egg,water and molasses.

2Slowly add in the dry ingredients the the fresh ginger. Roll the cookies into walnut sized balls the roll them in the reserved three tablespoons of sugar to coat.

3Place them on your baking sheet,two inches apart,about nine per sheet. Bake in a pre-heated 350 degree oven for ten minutes. Let cool on the baking sheet for ten minutes,move to a wire rack to cool completely. Store them in a plastic Tupperware container,enjoy!! :)
