These snowball cookies are a must for Christmas, New Year's, and weddings. They are delicious and are very easy to make. I usually double the recipe because they tend to disappear quickly.

Underneath the mound of powdered sugar is a buttery, melt-in-your-mouth cookie that is slightly crunchy from pecans. They taste similar to butter pecan ice cream and look like Christmas.

2 1/4 cpowdered sugar, divided

2 tsppure vanilla extract

1 Tbspwater

2 call-purpose flour

1 cchopped pecans

If you find the dough too soft, chill it for 30 minutes before baking.

1Preheat oven to 300 degrees F. Using an electric hand mixer, cream the butter and 1/4 cup powdered sugar.

2Add vanilla, water, and flour.

3Mix well with a sturdy spoon.

4Stir in the pecans.

5Using your hands, form the mixture into small balls and place them on ungreased cookie sheets or cookie sheets lined with parchment paper.

6Bake at 300 degrees F for 25 to 30 minutes.

7Add the remaining 2 cups of powdered sugar to a shallow dish. Working quickly, roll in powdered sugar while still hot.

8Let cool.

9Then roll in powdered sugar again. Store in an airtight container.
