pecan puffs

My mother-in-law made these every Christmas and she lovingly packaged them in mounds of bubble wrap to mail them to Texas kids from the Northwest. I will make them with my preschool granddaughters this year and tell them about their great grandmother and her wonderful gift of this recipe which will be handed down for generations.

Ingredients For pecan puffs

  • 1/2 c
    butter (do not substitute margarine)
  • 2 Tbsp
    sugar
  • 1/8 tsp
    salt
  • 1 tsp
    vanilla extract (do not use imitation vanilla)
  • 1 c
    cake flour - swans down is a good brand
  • 1 c
    pecans, finely chopped
  • 1/2 c
    powdered sugar

How To Make pecan puffs

  • 1
    Mix all ingredients well. Roll into small balls about an inch in diameter. Place very close together on cookie pan since they do not rise. Bake at 300 degrees for 25 minutes. Cool. Roll in powdered sugar.

    If margarine, imitation vanilla and regular flour are used the cookies will not be tender and flavorful. The combination of these ingredients is what makes them so very tender and delicious.
