Ingredients For peacan 'pie' cookies without the crust

1 ckaro syrup light or dark

3eggs

1 csugar

2 Tbspmelted butter

1 tspvanilla extract

3 cpeacans chopped (24 oz)
How To Make peacan 'pie' cookies without the crust

1Beat eggs.

2Mix in Karo syrup, sugar, melted butter, vanilla extract, and beaten eggs.

3Mix in chopped peacans.

4Let mixture stand in the refrigerator overnight. This allows the peacans to soak up all of the juices.

5Next day, preheat oven to 325 degrees. Use wax paper on cookie sheet. Drop mixture in 1 inch balls. Bake on center rack for about 5 to 7 minutes.

6NOTE: High altitudes areas need to lessen the sugar to 2/3 and increase the butter to 3 tablespoons.
