Ingredients For moist zucchini cookies

  • 1 stick
    butter, softened
  • 1 c
    sugar
  • 1
    egg, beaten
  • 1-1/2 c
    all purpose flour
  • 1/2 c
    whole wheat flour
  • 1 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1 c
    grated zucchini
  • 1 c
    raisins
  • 1 c
    chopped walnuts

How To Make moist zucchini cookies

    Heat oven to 350. Lay parchment paper onto baking sheets. In lg bowl, cream together butter and sugar until fluffy.

    Gradually beat in egg, flours, baking soda and cinnamon. Stir in zucchini, raisins and walnuts. Drop by tbsp onto baking sheets. Bake 15-20 mins, or until golden.
