Try these lemon cream cheese bars if you need a quick and easy dessert made with pantry staple ingredients. The bottom is like a lemon cookie with a slightly lemon cheesecake layer on top. Bits of the crust are sprinkled on top to create a crumble once baked. They're a fabulous lemon dessert.

  • 1 box
    lemon cake mix
  • 2 lg
    eggs, room temperature; divided
  • 1/3 c
    vegetable oil
  • 8 oz
    cream cheese, room temperature
  • 1/4 c
    granulated sugar
  • 1 Tbsp
    lemon juice concentrate
  • 1 dash
    vanilla extract
