2 lgeggs, room temperature; divided

1/3 cvegetable oil

8 ozcream cheese, room temperature

1/4 cgranulated sugar

1 Tbsplemon juice concentrate

1 dashvanilla extract

If you want to pack even more punch of lemon flavor, add lemon zest and a touch more lemon juice or fresh lemon juice to the cream cheese layer.

1Preheat oven to 350 degrees F. In a bowl mix dry cake mix, 1 egg, and 1/3 cup oil until crumbly.

2Reserve 1 cup of mixture. Press the remaining mixture into the bottom of a 9x13 pan. Bake for 15 minutes.

3While the crust is baking, beat cream cheese, sugar, lemon juice, remaining egg, and vanilla extract until creamy.

4Spread over crust.

5Sprinkle reserved crumbs on top.

6Bake for 15 more minutes. Do not overbake.
