- DRY INGREDIENTS

2 1/2 cflour

1 tspbaking powder

1 tspsalt
- WET INGREDIENTS

1 ccoconut oil
-
3/4 cwhite sugar
-
3/4 cdark brown sugar
-
2eggs
-
2 tspvanilla extract
-
1 pkginstant strawberry pudding mix
- ADDITIONALS:

1 1/2 cshredded coconut
-
1 cwhite chocolate chips
-
1 csemi-sweet chocolate chips
-
20 ozcrushed pineapple

1mango
How To Make it's five o' clock somewhere cookies

1Dump pineapple into large sieve to drain away juices. Leave in sieve at least 20 minutes, stirring occasionally to release trapped moisture.

2Dice mango and set aside on paper towel, to draw out some of the moisture.

3Toast 1 cup of the coconut in a pan over low-medium heat, until coconut is lightly browned. Set aside to cool. Reserve rest of untoasted coconut.

4Preheat oven to 350.

5Sift together flour, baking soda and salt in a large bowl. Set aside.

6In separate bowl, beat together coconut oil, sugars and eggs. Add vanilla and pudding mix. Mix well.

7Fold wet bowl into flour bowl. Add the chocolate chips, toasted coconut, and 3/4 of the pineapple. Fold gently until all incorporated together.

8On top of the cookie balls, press down a pinch of raw coconut, pinch of pineapple and pinch of mango.

9Roll tablespoon-full amounts in your hand and place on greased cookie sheet / pan.

10Bake for 8-10 minutes.
