great grandma johnson's pineapple drop cookies
These cookies are wonderfully moist and delicious! My Grandmother made the best cookies and these are some of my favorites. These need to be eaten within a couple days or they loose their moistness (I don't think they'll last that long in your house anyway!).

1/2 cbutter, unsalted

1/2 ccrisco shortening

1 tspsalt

1 cbrown sugar, lightly packed

1 tspbaking soda

1 Tbsphot water

4 call purpose flour

2 lgeggs, beaten

1 tspvanilla

1 cbroken nuts (optional)

8 ozcan crushed pineapple

1Preheat oven to 375 degrees.

2Cream the butter and shortening. Add sugar, baking soda, and hot water. Then add the beaten eggs. Stir in salt, vanilla and broken nuts (if using). Add crushed pineapple; mix in flour.

3Drop onto ungreased cookie sheet, a teaspoon at a time. Cook at 375 degrees for 8 to 10 minutes. Cool on wire rack.
