Great one for St. Patrick's Day! I got this recipe many years ago at a Christmas Cookie Exchange party. And it has been a favorite every since (along with a couple modifications from me!).

4 squareschocolate, unsweetened

2/3 cvegetable oil

2 cbrown sugar, firmly packed

3eggs

1 1/4 call purpose flour

1/2 tspbaking soda

1/4 tspsalt

1 tspvanilla

4 cconfectioners' sugar

3/4 cbutter

2 tsppeppermint extract

3-4 dropsgreen food colorig

3 Tbspmilk

6 ozchocolate chips

How To Make grasshopper bars

1Cake: In double boiler, melt 4 squares unsweetened chocolate and oil. Add brown sugar, flour, eggs, baking soda, salt, and vanilla. Beat well. Place in ungreased 9" x 13" pan for 35 minutes. Cool.

2Icing: Combine confectioners' sugar, 3/4 cup butter, peppermint extract, food coloring, and 3 tablespoons milk. Beat until fluffy and spread onto cooled chocolate cake.

3Melt in double boiler chocolate chips and 3 tablespoons butter. Drizzle over icing and spread to make chocolate layer solid. Refrigerate to set chocolate.

4To cut into bars, warm up a knife to avoid chocolate from splitting.
