I first tried these about ten years ago and they quickly became one of my favorite cookies. The kids love them too! 07-12-14

Ingredients For ellen's cinnamon oatmeal cookies

1 cbutter, softened

3/4 cgranulated sugar

3/4 cpacked brown sugar

2 lgeggs

1 tspvanilla extract

1 1/4 call purpose flour

1/2 tspsalt
-
1 tspbaking soda

1/2 tspground cinnamon
-
3 cquick or old-fashioned oats
-
1 pkg(10 oz.) hershey's cinnamon baking chips
How To Make ellen's cinnamon oatmeal cookies

1In a large bowl, combine butter, granulated sugar, brown sugar, eggs and vanilla extract.

2In another bowl, combine flour, baking soda, salt and cinnamon. Gradually add to the butter/sugar mixture.

3Stir in the oatmeal and the morsels.

4Drop by rounded tablespoon onto an ungreased baking sheet.

5Bake in a preheated 375º oven for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

6NOTE: You can substitute Nestle Butterscotch morsels for the cinnamon chips, for a slightly different taste.

7Here are the Cinnamon Chips I buy. They are sometimes hard to find, hence the above substitution.
