This is a Polish Easter shortbread. This recipe was handed down by one of my relatives. I am really not sure which one. It was scribbled on paper. It is really delicious! This shortbread consists of Cherries, Apricots, Citrus, Walnuts and Golden Raisins. I hope you all enjoy this Polish pastry. cieszy? si?

  • DOUGH
  • 2 c
    all purpose flour
  • 1/4 tsp
    salt
  • 2 Tbsp
    milk
  • 1 1/2 c
    ground walnuts
  • 1 c
    butter
  • 1 c
    sugar
  • 3
    eggs
  • TOPPING
  • 1/2 c
    sugar
  • 2
    eggs
  • 1 c
    golden raisins
  • 1 c
    chopped apricots
  • 1 c
    chopped dates (optional)
  • 6 oz
    jar of maraschino cherries drained or candied cherries
  • 1 c
    chopped walnuts
  • the juice of one lemon
  • the zest of one lemon
  • the juice of one orange
  • 1 Tbsp
    orange zest
  • 1 1/2 oz
    rum

How To Make fruit short bread • polish mazurek

    Heat oven to 350°. Grease a 15 x 10" cookie sheet.

    In a bowl beat together softened butter and sugar until light and smooth. Add the eggs and milk . beat well.

    Add the flour slowly until it is mixed in well. It should sort of resemble a brownie batter. Stir in the salt and the ground walnuts. Place in oven. Bake for 20 minutes or until lighly browned.

    Prepare topping while pastry is baking. Mix the raisins, apricots walnuts, lemon zest orange zest, juices, sugar, eggs, sugar, Rum and cherries together in a bowl and set aside.

    After 20 minutes is up remove pastry from oven. Top with the fruit and nut mixture. Return to oven. Bake another 20 minutes. Remove from oven and mark off slices into 24 to 36 squares. Do not slice all the way through. Cool and cut into squares where you had previously cut the pastry. Enjoy!
