I tried to capture all the flavors I so enjoy at Christmas and I think I did just that! These buttery, crispy, chewy cookies are bursting with the outstanding flavors of Christmas. Hope you enjoy!

Ingredients For cranberry-orange crispy oatmeal cookies

1/2 cbutter, room temperature

1/2 cshortening, butter flavor

1 csugar

1 cbrown sugar, firmly packed

2 lgeggs

2 call purpose flour
-
1 coats, regular (uncooked)

1/2 tspsalt
-
1 tspbaking powder
-
1 tspbaking soda
-
1 Tbsporange juice, fresh
-
1 ctoasted rice cereal, i used rice krispies
-
1 ccoconut, flaked sweetened
-
1 cdried cranberries, i used craisins (you can use raisins or dried cherries)

1 cwalnuts, chopped
-
1/2 cchocolate chips, i used mini chips

zest of one orange (about 1/2 tbsp)
How To Make cranberry-orange crispy oatmeal cookies

1Preheat oven to 350 degrees.

2At a medium speed, mix butter and shortening until fluffy; add both sugars and mix well. Add eggs beating well after each.

3Combine flour, oats, salt, baking powder and baking soda; gradually flour mixture add to sugar mixture. Scrap down bowl as needed. Add orange juice; mix well.

4Combine rice cereal, coconut, cranberries, walnuts, chocolate chips and orange zest; gently mix to combine. Hand stir into batter.

5Drop by tablespoon onto baking sheet; bake for 10 to 12 minutes until lightly golden. Remove to wire racks to cool.

6NOTE: when zesting the orange peel be sure to only zest the orange part, not any of the white.
